A unique twist on an old classic! The ginger and turmeric make it warming and perfect for a cold day. Spread on crackers, use a dip for fresh veggies, or layer it between veggies and vegan cheese to make an epic sandwich (our personal favorite).
Ingredients for Red Lentil Hummus
2 C red lentils
7 C filtered water
2 tbsp tahini
2 tbsp grated fresh ginger
1 tbsp each of smoked paprika, cumin, and turmeric
Juice of 1/2 lemon
Place lentils and water into a small pot and bring to a boil. Reduce heat and simmer for 20 minutes or until lentils are soft. Drain and rinse lentils with cool water. If you lentils are too soft to drain, drain and place them on a sheet pan and put in the refrigerator to cool for 20 minutes. Place cooled lentils in a food processor, add the rest of the ingredients and blend until smooth. Salt and pepper to taste. And that's it! You're done! Enjoy.
